Shan Paya 50g
Ingredients: salt, paprika, red chili, coriander, turmeric, cloves, carombole, nigella, cumin, ginger, black pepper, green cardamon, brown cardamon, garlic, dehydrated onion.

Keep cool and dry.
Preparation: add 1 tablespoon of garlic paste and legs in 15 cups of hot water, boil for 10 minutes and then remove the water. Take 12 cups of boiled water, add the legs, half a chopped onion, ginger and garlic paste. Cover and cook over low heat until the legs are tender. (goat/lamb 3-4 hours, cow 6-8 hours). Heat oil or clarified butter in a separate pan, fry the remaining onion until golden. Add shan paya mix and yogurt. Stir-fry for a few minutes and then pour in the paya curry. Cover and let simmer on low heat for 30-45 minutes.
